Bake My Day creates custom wedding cakes

DESTIN — At Bake My Day bakery, not only do wedding cakes look extraordinary, but they melt in your mouth.

Heidi Godwin, owner and pastry chef, said wedding and grooms cakes are treated as a delectable art form at her shop.

“We use a lot of color and a massive amount of work goes into designing the sugar flowers and seashells,” Godwin said. “Wedding cakes are a sugar art — we can get crazy.”

Godwin opened Bake My Day in 2007, after graduating from culinary arts school and after years of working in the restaurant industry.

The staff custom designs cakes into any shape, theme and color palette that the client desires.

In just five to six days Godwin said she and her staff can whip up anything from a French Quarter bistro themed cake or even a sport’s team logo for the grooms cake.

She said they also make intricate sea castles and brightly colored floral creations.

Cakes are made with natural syrups and scratch fruit purees to make flavors such as vanilla and chocolate sponge cake and dark chocolate.

All cakes are filled and baked using natural ingredients such as Madagascar bourbon vanilla, rich Swiss chocolate or creamy butter. For the finishing touch, cakes are iced with 100 percent butter cream and chocolate ganache.

Godwin said the most popular flavor is her tuxedo replica cake and her citrus cake.

The tuxedo cake is made from one layer of chocolate sponge cake and two layers of French vanilla. The citrus cake is infused with orange and lemon juice.

“We encourage clients to bring in any ideas, pictures and colors that will help inspire us in the final design,” she said. “Brides come in with their own ideas, or I show them my portfolio, and we just go from there.”

Wedding cake prices depend on the complexity and number of servings, but typically run for $6.50 a slice.

Consultations are free, but a non-refundable deposit of 25 percent is required to secure a date. The remaining balance is due one month before the wedding.

“I love every aspect of baking wedding cakes,” she said. “Everything from the aroma in the bakery to putting the final touches on the cake.

“When it is completed, I step back and go, ‘Wow,’ and hope the bride just loves it and it is what she envisioned.”
